The recipe is easy to double, quadruple, half, whatever! It’s great for brunches and for gifts. You can also use the granola in place of nuts in some cookie recipes.
GRANDMA KAREN’S GRANOLA
Supplies needed:
large bowl, small saucepan, large spoon, measuring cups and spoons, stove, oven
Ingredients needed:
Oats, powdered milk, cinnamon, nutmeg, cloves, salt, brown sugar, oil, honey. Optional ingredients (nuts, raisins, seed and fruit) as desired.
Preheat oven to 375*. Spray a cookie sheet per batch.
Combine in a large bowl:
5 cups oats
½ cup dry milk
¾ teaspoon cinnamon (or more)
¼ teaspoon nutmeg
1/8 teaspoon cloves (optional)
pinch of salt
Optional ingredients can be added to bowl or later, after baking: nuts, wheat germ, coconut, dates, raisins Craisins, flaxseed or chia seeds
Add them now if you want them mixed into all the granola and baked.
Raisins and Craisins can get a little hard when baked in this recipe. We prefer the optional ingredients not baked in the granola, but added later. One exception: nuts are nice toasted (baked) IF your whole family likes one kind. We have lots of nuts allergies, so everybody who wants them adds their own kind later. Instead of adding in the optional ingredients, we like to serve it “add your own toppings” buffet-style.
In a small saucepan, mix:
½ – ¾ cup brown sugar
1/3 cup oil
1/3 cup honey.
You can use less sugar. I use 1/3 cup so that there is only one measuring cup to clean. Clean up is easier if you measure the sugar first, then oil, then honey.
Heat until the sugar dissolves, watch carefully as it starts to boil so that it doesn’t burn. You’ll be able to see on the spoon that the sugar has dissolved.
Pour honey mixture over dry ingredients.
Stir until all ingredients are moistened.
It takes a bit of stirring and poking to get all the oats moist.
Spread mix in GREASED baking sheet
and bake at 375* for 10 minutes, cook slightly longer if you prefer dry, crunchy granola. It will just be starting to look toasty.
Turn and stir immediately after removing from oven.
Let cool completely before transferring to air-tight container.
It’s delicious plain–as a snack or with milk as cereal–or with any of the add-ins (nuts, fresh or dried fruit, coconut and/or seeds. It’s yummy as a topping on ice cream or yogurt–or layered with yogurt and fresh fruit for a parfait.
